Whether you are a fan of salad or you like to use dressings as a marinade or dip, salad dressings are universally used in some form in the kitchen. The problem with many store-bought dressings is that they can be heavy on sodium, sugar and fat. The last thing we want to put on our fresh produce and greens!

Have you ever tried your hand at making your own dressings? When you go the DIY route you can add healthy oils, condiments you might not think of and fresh herbs.


The options are endless as long as you remember a few things:

You need an acid to go with the oil (lemon juice, vinegar or mustards)

Use a light oil that tastes good, that doesn’t always mean using what you cook with. Some oils are better suited for dressings.

Use seasoning- you need a pinch of salt, sugar, maple syrup, honey or agave to balance out the acid and oil.

Use up those dried or fresh herbs.


In class this month we all picked one of the recipes below, added the ingredients to a mason jar, placed on the lid and shook, shook, shook! This was the most hands on class we had done thus far and it was also fun! Everyone got to flex their creative muscles and make each recipe their own. Best of all these are simple recipes.

Mason jar salad dressing recipes are best used within 2-3 days of being made (if they last that long) because there are no added preservatives. Because there are also no added stabilizers, shake before using as ingredients will settle over time.


Lemon Vinaigrette

3/4 C olive oil or vegetable oil

4 TB grated Parmesan, more to taste

1/4 tsp salt (or more to taste)

Freshly ground black pepper

1/4 tsp sugar

¼ tsp paprika

Juice of 2 lemons

1 garlic clove, chopped

Add all ingredients to a mason jar and shake!


Sweet and Tangy Dressing

½ cup vegetable oil

½ cup apple cider vinegar

½ teaspoon salt

¾ teaspoon seasoned salt (I used Lawry’s)

3 tablespoons sugar

⅛ teaspoon pepper

¼ teaspoon ground mustard

Add all ingredients to a mason jar and shake!


Orange Ginger Dressing

Juice from one orange

1 T minced ginger

2 T minced carrot

2 T minced onion

1 T mustard seed

1 cup olive oil

1/2 tsp. sea salt

Add all ingredients to a mason jar and shake!



Blue Cheese Dressing

1/2 C blue cheese

3 TB buttermilk

3 TB light sour cream

2 TB light mayonnaise

2 TSP white wine vinegar

1/4 TSP sugar

1/8 TSP garlic powder

salt/pepper to taste

Add all ingredients to a mason jar and shake!


Tahini Dressing

1/3 C Tahini

1/3 C water

1/3 C fresh lemon juice

pinch of salt

fresh black pepper

1/4 tsp sugar

Add all ingredients to a mason jar and shake!


Mustard Vinaigrette

1 TB mustard

1 1/2 TB red wine vinegar

1/4 C olive oil

salt and pepper to taste

Add all ingredients to a mason jar and shake!
