For this month’s Door to Wellness cooking class we decided to make a healthier version of a popular dish- lasagna. Lasagna can be daunting and at best frustrating to make. From boiling the noodles to not overfilling the baking pan, it isn’t always easy.

Like I mentioned in the last blog post, I ask the clients each class what they would like to see more of, learn about or eat next time we gather together. By popular vote, lasagna was the winner!

Until recently, I had only made this recipe on special occasions or when I needed to have leftovers or feed a crowd. What held me back? Two things: boiling the noodles and the fat and calorie count. I knew I could buy “no boil” noodles or even make it ahead of time and store the unbaked dish in the refrigerator to soften the noodles. But I wanted to share an easier way to get this done.

Red Gold Tomatoes has a great recipe I found online that cuts the time, fat and calories all in one simple and cost effective recipe. It was a no-brainer that we would make this in class! Some highlights are- lean ground beef (or turkey), completed from start to finish in under 2 hours AND you don’t have to boil the noodles!

It is so simple, tastes great and we all enjoyed making it together. There are some real cooks in this class! But like always we learned from each other and had a great time communing and then dining together afterwards.

Lasagna is a great way to sneak in a few veggies here and there and this recipe lends well to adding chopped fresh spinach, shredded raw squash or even zucchini. Make it your own. We also talked about substituting the meat for chopped raw mushrooms. I would love to hear how YOU make this!
