Little Red Door took the Eat Well, Live Well program to the State Fair this year. Director and CEO Fred Duncan and myself were there for all 17 days, cooking healthy recipes, answering questions and educating the public.
We met more than 1,500 people and taught them easy ways to make healthy changes in their diet without breaking the bank. Eat Well, Live Well is geared towards encouraging individuals to eat plenty of fresh fruits, vegetables, and whole-grains while limiting fat intake.
Here is one of the recipes we made at the State Fair:
3 cups cabbage (red and green)
1 cup broccoli, finely chopped
1 cup carrots, shredded
1/2 cup edamame
1/2 cup shallots
3 tbsp. soy sauce
3 tbsp. rice wine vinegar
2 tsp. sesame seeds
2 tbsp. peanut butter
Chop vegetables and combine in a bowl. Combine soy sauce, rice wine vinegar, peanut butter, and sesame seeds. Combine liquids and vegetables and mix well.
4 cod filets
1 tbsp. olive oil
Salt and Pepper
Heat olive oil in skillet. Season both sides of the fish with salt and pepper. Place fish in heated olive oil, allow to cook on each side for 2-3 minutes (it should start to look flakey). Carefully try to pat the fish with a clean cloth to absorb some of the excess water so sides don’t get soggy when plated.
